Orange cocoa butter, discarder orange peel
Preparation for the garnish:
1. Freeze the ice ball until rock solid and keep it in the freezer.
2. Melt cocoa butter gently to 45 °C.
3. Coat the ice ball with a thin first layer of cocoa butter melted, drain excess so a film remains.
4. Repeat, until we get a thick layer.
Homemade blood orange cordial:
1kg blood orange juice
467g sugar
15 g ciric acid
Recipe:
Pour all the ingredient in a mixing glass full of ice, stirred, pour inside the Nick & Nora glass.
Garnished with the cocoa butter ice ball and discarded orange peel.
