How to make:

Build all ingredients in the glass over cubed ice.
Forager Syrup
🧪 Ingredients
100g Local Honey
100g Water
1g Dried Chamomile Flowers (~1 heaped tsp)
2g Fresh Lemon Thyme (~2 small sprigs)
🔬 Method (dialled for clarity + control)
Warm (don’t boil) water to ~60°C
Add chamomile + lemon thyme
Infuse for 15 minutes (covered)
Fine strain
While still warm, add honey and stir until dissolved
⏱️ Resting Time (important)
Let it sit 12 hours before use
👉 This rounds out:
Chamomile bitterness
Thyme sharpness
Integrates honey properly
❄️ Shelf Life
Fridge: 5–7 days

1 1/6 fl oz Beesou Bitter Honey Aperitif
2/3 fl oz Dolin Dry vermouth
1/3 fl oz Lemon juice (freshly squeezed)
1/3 fl oz Forager Syrup
2 fl oz Nyetimber Classic Cuvee 2007 English Sparking Wine
