100g Local Honey
100g Water
1g Dried Chamomile Flowers (~1 heaped tsp)
2g Fresh Lemon Thyme (~2 small sprigs)
🔬 Method (dialled for clarity + control)
Warm (don’t boil) water to ~60°C
Add chamomile + lemon thyme
Infuse for 15 minutes (covered)
Fine strain
While still warm, add honey and stir until dissolved
⏱️ Resting Time (important)
Let it sit 12 hours before use

Thyme sharpness
Integrates honey properly
