Garnish:

Reserved strawberry top placed on the drink - Repurposes the tops for one more use, rather than heading straight for the bin/compost - Gives the drink a resemblance of a strawberry - Low effort, easily replicable en-masse. - Lets the drink do the talking

How to make:

For the Strawberry Vermouth
- Weigh your seasonally available, wonky strawberries
- Equal weight Allain Millet Sauvignon Blanc Grape Juice
- Blend well
- For every 400g total liquid, add 1g Pectinex
- Let settle, ideally overnight
- Strain through coffee filter
- For every 300ml of Strawberry/Grape Juice, add 50ml of both Botivo & Everleaf Mountain
- Bottle & Store in fridge for use.
For the cocktail
Combine all ingredients in a mixing tin
Stir well over cubed ice
Strain into an ambient temperature Nic & Nora Cocktail Glass
Garnish with reserved strawberry top

1 fl oz Beesou Bitter Honey Aperitif
2/3 fl oz La Barossa 0.5% Tequila
1 fl oz Strawberry Vermouth
