Viola Flower
Shake all ingredients except sparkling wine.
Fine strain into a wine glass.
Top with Westwell English Sparkling.
Serve over cubed ice and garnish with a viola flower.
Home made ingredient:
Apricot & Chamomile Syrup
100g Dried Apricot Chopped
300ml Hot Water at 80 degrees
2 Birchall Chamomile Flower Tea Bag
60 ml Sugar Syrup (2:1)
10 drops Saline solution (1:20)
25 ml Acid Solution (Malic/Citric)
Season LIght Bitters (5 dashes to every 30ml of finished syrup)
Steep chopped apricot and chamomile tea for 20 minutes. Add to the blender and blend. Strain through a fine strainer. Add all other ingredients and stir. Keep for 2 weeks.

| 1/2 fl oz | Sacred English Amber Vermouth |
| 1 fl oz | Apricot & Chamomile Syrup |
| 2 1/2 fl oz | Westwell English Sparkling Wine |
| 1/6 fl oz | Lactic Acid Solution (10:1) |
