Toasted rosemary aroma with fresh thyme and half the rim salted with smoked salt
1. burn the rosemary and place under the glass
2. Add all the ingredients into a cocktail shaker with plenty of ice and shake
3. Remove the glass from the smoke then swirl the glass gently
4. Use a small brush to paint the agave syrup on half the glass, then roll in the salt
5. Then double strain into the coupe
6.to finish it off, slap the thyme on the back of your hand and place in the drink
Herbal spiced agave syrup
Yield: 375ml
325g agave nectar
60ml water
10g fresh thyme
2g fresh rosemary
40g fresh jalapeño
How to make:
Add all ingredients into a pan. Heat gently for 10 minutes — do not let it boil. Turn off the heat, put a lid on and leave to infuse for 30 minutes. Once ready, strain through a muslin cloth and bottle.
Orange acid blend
Yield: 375ml
375ml water
15g citric acid
15g ascorbic acid
7.5g malic acid
95g fresh orange peel
How to make:
Peel the oranges, only using the bright-coloured skin. Place the peels into a container, then only add citric, ascorbic and malic acid. Stir gently so the acid coats the peels, then cover, then leave for around 8 hours. Add the water and stir well until fully dissolved. Once ready, strain through a muslin cloth then bottle.
