Shake and Fine Strain

How to make:

Homemade Ingredient:
50g ginger (cut off skin) blended with 250ml agave syrup.
Garnish - Coral Tuiles
Mix 10g plain flour (all purpose alternative)
30ml oil
90ml cold water
4x drops yellow food colouring
Whisk in bowl, put a table spoon amount of preheated frying pan (medium to high heat) when edges crisp remove off pan
Add all ingredients in tin, shake hard and fine strain over chilled nick and nora. Gentle place garnish on top.

1 1/3 fl oz Beesou Bitter Honey Aperitif
1/2 fl oz Del Maguey Vida Clásico Mezcal
1/2 fl oz Lime juice (freshly squeezed)
1 dash Saline solution (20g sea salt to 80g water) or merest pinch of s
1/2 fl oz Ginger Agave Syrup
