Green Alkanet
Prep:
Hawthorn tea: 6g of tea x 500ml boiling water x 7 minutes than Strain in a coffee filter.
Add in a vac pack bag: 400gr of hawthorn tea + 50gr of Hawthorn dry berries + 50gr of fresh elderflower .
sous vide 60@ / 30 minutes, place the bag in a ice bath for 20 minutes than strain in a coffee filter.
Add equal part in gr of Golden raw Honey, mix to incorporate.
Than add in gr 1% of citric and 1% of malic acid of the total weight in gr , mix to incorporate.
Method:
Add 40ml of Beesou Aperitif and 20ml of the Golden Cordial into a wine glass, add ice cubed and top up with English Sparkling wine.
Mix to incorporate.
Garnish: place a Green Alkanet edible flower floating
| 1 1/3 fl oz | Beesou Bitter Honey Aperitif |
| 2/3 fl oz | Golden cordial |
| Top up with | English sparkling wine |
