Beesou glazed Woodear mushroom (reused from cordial) and pollon aroma.

How to make:

Chill glass, remove excess water.
Add ice spear.
Build.
Top.
Pull through.
Garnish and spray with pollon aroma.

1 1/3 fl oz Beesou Bitter Honey Aperitif
5/6 fl oz Woodear and English Sparkling Wine cordial
2 drop Saline solution (20g sea salt to 80g water) or merest pinch of s
Top up with Blueberry kombucca
