Garnished with 2 candied chillies placed ontop of ice
Hot honey recipe.
100ml of hot honey
1 small green chillis
1 large red chillis
(To scale up 1 of each chilli per 100ml of honey)
Finally chop green chillis while chopping red chillis in a style suit for garnish and place into a mason jar or sous vide bag make sure to include the seeds
Sous vide at 65° for 2 hours
Strain out the chillis keeping red ones aside for garnish
Candied chilli recipe.
Take honey covered red chillis and place into an oven or dehydrator at a low temperature.
Alternatively you can leave chillis under a heat lamp in kitchen/on pass if being made in a restaurant kitchen.
Cocktail recipe.
Pour all ingredients into a mixing glass or cocktail tin and stir.
Pour into your chosen rocks glass and add ice to glass.
Garnish with 2 candied chillies placed ontop of the ice.
Enjoy.
