Saint Benevolence Rum Clairin is a Haitian rum distilled from the fermented cane juice of four indigenous sugar cane clones: Cristalline, Madame Meuze, Farine France and 24/14; all organically grown in the fertile alluvial soils and tropical climate of Saint Michel de l'Attalaye.

The sugarcane is organically farmed in the fields immediately surrounding the third-generation family-owned Dorcinvil Distillery. The cane is hand-harvested, pressed and fermented with wild yeasts for five to seven days. The fermented cane juice (vin de canne) is batch distilled in a small Creole copper pot still.
