Aged for a minimum of five years in oak casks, this marc from Burgundy is distilled from the pomace of grapes grown in the vineyards of the Côte de Nuits and Côte de Beaune.

Distilled from the grape stalks and skins
left after winemaking fermentation, marc is France's answer to Italian grappa. Unaged marcs can be harsh but maturation in oak adds roundness and complexity.

Use as a cocktail ingredient or mix Burgundian-style with crème de cassis ( 1/5th marc to 4/5th cassis) over ice.

Review and Tasting

Sampled before 1st May 2011

Appearance:

Clear, golden amber.

Aroma:

Pungent. Cigar leaf, oak, and vanilla.

Taste:

Peppery spirituous spice is rounded and mellowed by vanilla-rich oak with good fruit character from the grapes.

Aftertaste:

Long, spiced oak and vanilla.

Overall:

An interesting cocktail ingredient but also be sure to try, Burgundian-style, mixed with cassis. Or just sip with a cigar.
