As others have said, use a pineapple de-corer tool and this is a piece of cake to make. Delicious summer cocktail, dangerously easy to drink.
Would probably be good with a coconut rum?

I have a pineapple de-corer slicer. Made the prep to this absolutely no problem.
Drink tastes great and it’s a real centrepiece whenever had

Using a homemade sharpened spoon, it took less than four minutes to hollow out the pineapple. That made it much less of a hassle.
I also added some passion fruit syrup, and it didn't make it any less delicious...
