This spirit was on my bucket list for a while, and only recently did I get a chance to try it. While this was not the sotol that I sampled (was Seis 14 Grand Sotol, 90 proof) it has instantly become my favourite. Being used to drinking tequila and mezcal I was so excited when sotol brought even more of the qualities that I enjoyed in the aforementioned spirits. The nose and taste of Seis was incredibly funky, stinky even. Leather, smoke, salinity with an almost aged Parmesan like quality to it.
Also adding to the Sotol love here. If you can, get some Desert Door Oak Aged Texas Sotol 100 Proof, it is amazing. The sotol is aged in oak barrels for almost 1 year. The results: think if Mezcal and Bourbon had a baby, this would be it. Makes an amazing old fashioned.
Yay! Sotol has finally reached Difford’s guide too! :) Passionately spreading the sotol love here in Amsterdam, the Netherlands where almost noone know it yet. It is the sustainable future for agave-spirits, since those have become a bit scarce at the moment. As one of three other bars in the Netherlands, I got to put sotol plus a nice dry negroni-style cocktail on our new menu and people are loving it! :D La Higuera Wheeleri sotol is amazing!
Also a sweet negroni with sotol instead of mezcal plus a bit of Fair coffee liqueur is a combo to die for! It’s funny how some people who don’t really love mezcal are digging sotol :)
