If using a sweeter Madeira such as Verdelho/Rainwater (medium dry) or Bual (medium sweet) you'll need to adjust this finely balanced cocktail. Even Baker...
Very nice drink. I only had what I suspect corresponds to a rainwater style Madeira (Casa dos Vinhos Madeira, Fine Old Madeira, 5 year old, oak cask aged) but I didn't find the sweetness overpowering or unbalanced. Aside from the usual dried fruit, there was a lovely caramel note. Can't wait to try this with the prescribed drier Sercial Madeira!
What a wonderful aperitif. We were looking for a new cocktail for Mardi Gras as we have all the traditional Mardi Gras cocktails a lot. This caught my eye with the use of Creole.
Perfectly balanced. Sweet enough to be flavourful. Wonderful way to start our Mardi Gras dinner with homemade chicken liver pate and some other appertisers.
