I had some friends bring this bottle from France and even there it was not easy to find! This is really interesting liquor. You get the thyme for sure on the nose but when you drink it smoothes it out and very unique and interesting. You canuse this in culinary as well!
I am currently using La Farigoule thyme liqueur, which is very similar to this Bigallet option. I made the following drink tonight and rather enjoyed it:
Mare Nostrum
1.75 Oz Gin Mare
Heavy 0.75 Oz Pamplemousse liqueur (maybe go up to 1 full Oz)
0.50 Oz thyme liqueur
0 75 Oz Lillet Blanc
2-3 drops lemon bitters.
I love cooking with a grapefruit and thyme combination and was trying to bring that into a cocktail context.
