This vermouth category is intended to represent a style of rosso vermouth that's a bit more full-bodied than Dolin Rouge. However, if that's what you have, then I'd give it a go.

The Guide (tm) categorises rosso vermouths into
* Rosso/rouge(sweet) inc Dolin rouge [467 recipes] "130g/L sugar, lightly/unaged"
* Full-bodied sweet (eg antica formula) [51 recipes] "antica style, sweet, fruity" was "aged"?
* Vermouth amaro - full-bodied (eg Punt e Mes) [41 recipes]
* Light vermouth amaro, eg Cardamaro
etc ..
So would the 'vermouth di torino' in this recipe map onto the 'full-bodied sweet' category?

Presently, it sits between the two - e.g. Cocchi Vermouth di Torino sits between Martini Rosso ("130g/L sugar, lightly/unaged") and "Full-bodied sweet (eg antica formula)". However, I'm aware that our vermouth categories need addressing, and I'm working on this ahead of my vermouth seminar at Tales this July (2024).

Thanks! My bottle of carpano is definitely passed use by now… annoyingly they only seem to sell it in litre bottles here, other than online.
