The most important gin cocktails that I make with every bottle of London dry I acquire in order to fully assess how the spirit behaves are as follows - I call them the Big Five: The Gin & Tonic, the Martini, the Negroni, the Gimlet, and the Tom Collins. Of these five, the Tom Collins is missing from this list and I feel that is an unfortunate omission.

Strictly speaking, a Tom Collins should be made with Old Tom Gin. With London dry gin it becomes a John Collins.

Wow what I great list. I’ve got a couple I need to try in here. Last year I made it my mission to introduce that Southside to local bartenders (I think I called it a Southside Fizz to avoid scaring anyone). That went pretty well. Lots didn’t have Chartreuse on hand… maybe this year I’ll try for a Basil Smash and see how it goes!

I really enjoy your Sunflower and White Lady. They are a couple of my go-to's when making a gin cocktail.

Sunflower and White Lady are both delicious and would have sat well on the list above.
