I love a classic negroni, but have moved to the 1.5 gin, 1 sweet vermouth, .75 Campari that my son's bar uses.
But this white negroni will be tweaked and become a regular. It mellows the sharpness of Suze and gives a great use for Italicus. It IS sweet, so I'll probably do a bit more grapefruit bitters &/or add a couple drops of saline. I use clear Bombay, so maybe a more juniper forward gin will be a good exchange. Very nice add though!
I used Monkey 47 and I think this oughta be something more juniper-forward, and next time I'll use my Sipsmith. But there will definitely be a next time. It's quite sweet, which is why a more classic London dry is probably better, but very well balanced and flavorful. I'm generally not super enthusiastic about sweeter drinks but this was really fantastic.
