I’ve updated this recipe and will rephotograph ASAP. The previous recipe:
60 ml Light white rum (charcoal-filtered 1-4 years old)
30 ml Lime juice (freshly squeezed)
15 ml Grenadine/pomegranate syrup
15 ml Egg white (pasteurised) or Vegg White vegan egg white alternative
This makes a fantastic summer drink (and here it is late winter). Not sweet, I used a homemade grenadine syrup. Absolutely great flavor and very enjoyable.
This was a delicious drink — and interesting. The final drink did not have the flavor profile I was expecting. Somehow the egg white brought out the jammy, rich fruity flavors of the grenadine.
Normally we cut back on the grenadine to make the cocktail a bit dryer, but we used full amount and it was perfect. The colour was exactly in the picture, and the cocktail was refreshing. Perfect for the latter days of Summer.
