Serve in an Old-fashioned glass

Ingredients:
2 oz	Light white rum (charcoal-filtered 1-4 years old)
1 oz	Lime juice (freshly squeezed)
¹⁄₂ oz	Monin Grenadine Syrup
¹⁄₂ oz	Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer

How to make:

Select and pre-chill an Old-fashioned glass.
Prepare garnish of orange slice & Luxardo Maraschino Cherry on stick (sail).
SHAKE all ingredients with ice.
STRAIN back into shaker.
DRY SHAKE (without ice).
FINE STRAIN into ice-filled glass.

This makes a fantastic summer drink (and here it is late winter). Not sweet, I used a homemade grenadine syrup. Absolutely great flavor and very enjoyable.

This was a delicious drink — and interesting. The final drink did not have the flavor profile I was expecting. Somehow the egg white brought out the jammy, rich fruity flavors of the grenadine.

Normally we cut back on the grenadine to make the cocktail a bit dryer, but we used full amount and it was perfect. The colour was exactly in the picture, and the cocktail was refreshing. Perfect for the latter days of Summer.

Mine came out nowhere near that colour, and based on the amount of grenadine I have no idea how it would. Tasted great though.

I really liked this as I’m not a fan of very sweet cocktails, this has a nice tartness that the wife and I enjoyed.
