A bone-dry Manzanilla aged (for an average of five years) under a veil of yeast called "flor" in the cool, humid, salty air of Sanlúcar de Barrameda, a fishing town on the estuary of the Guadalquivir River.

Papirusa means "elegant and beautiful" and was the name of the doll that Emilio Lustau (gave the daughter of Joaquín Burgos, first manager of Bodegas Lustau in the 1940s.

Serve at 7 - 9ºC (44 - 48ºF) as a dry aperitif or with Ibérico ham, salads, fresh seafood, ceviche, oysters, sushi or sashimi and fish dishes.

Appearance:

Pale straw yellow.

Aroma:

Hits of salty sea air with yeasty chamomile, oyster shells, green apple and chalky minerality.

Taste:

Light-bodied and dry with a refreshing sharp crispness and light salinity.

Aftertaste:

Delicately salty, dry and crisp with yeasty green apple.

Overall:

Years of aging in Sanlúcar de Barrameda on the estuary of the Guadalquivir River imparts a delicate signature saltiness to this delicious bone dry wine.
