| 1⁄2 fl oz | Oolong tea syrup |
| 1⁄2 fl oz | Lime juice (freshly squeezed) |
| 2 barspoon | Orange marmalade |
| 1⁄2 fl oz | Lustau Amontillado Los Arcos Sherry |
| 1 fl oz | Pineapple juice |
| 1 fl oz | Rutte Old Simon Genever |
| 3⁄4 fl oz | Mandarine Napoleon liqueur |
Garnish: Sprig of thyme
Serve in a Coupe glass
-Combine all ingredients into a shaker tin,
-Fill shaker with ice and shake.
-Strain, dry shake then double strain into coup
Steep 4 Oolong tea bags in 500ml of boiling hot water for 1 hour. Add 500ml raw cane sugar and stir until all sugar is dissolved. Fine strain into a bottle and store refrigerated for up to 4 weeks.

I wanted to utilize Mandarine Napoleon craft a cocktail that elicits that same euphoria. The notes from the liqueur meld and play lovely with the nuttiness of the amontillado sherry. The fruity flavors of mandarin orange is balanced with pineapple as the malt of the genever ties everything together.

Was excited to use my homemade oolong syrup, but I don’t think it or the Old Simon comes through well enough. Still a tasty drink, but less than the sum of its parts.
