How to make

Prepare

Select and pre-chill a COUPE GLASS.
Prepare garnish of pineapple wedge skewered with cocktail stick.

Method

SHAKE all ingredients with ice.
FINE STRAIN into chilled glass.

Garnish

Garnish with pineapple wedge on rim.

The effect of the mezcal and pineapple juice are apparent - I'm sure the bourbon and cinnamon syrup are contributing (esp sweetness) but the flavor notes are far in the background. A tasty cocktail esp. if you like sweetish grilled pineapple (I thought it was very good).

To our taste, an excess of pineapple juice can dull the brightness of a Sour. So we split the juice 50:50, with 22.5ml each of pineapple and lime. Lovely for us. An excellent cocktail.

I found it a bit sweet for my taste with both the pineapple juice and cinnamon syrup.
