
Lemon zest with lemon peel
1. Prepare your shaker – Fill a cocktail shaker with ice.
2. Add ingredients – Pour in:
• 45ml Hayman's London Dry Gin
• 15ml sugar syrup (1:1 ratio)
• 20ml freshly squeezed lemon juice
• 5ml apricot liqueur
3. Shake well – Shake vigorously for about 10 seconds to chill and mix the ingredients.
4. Strain – Double strain into a chilled cocktail glass
5. Float the sherry – Gently float 5ml of Lustau Oloroso Sherry on top of the drink by slowly pouring it over the back of a spoon.
6. Garnish with lemon zest and lemon peel, serve immediately
