Coupe glass

Garnish:

Fresh Sage Leaf, 3 Maraschino Cherries, and Lemon Twist

How to make:

1. Begin by rubbing a fresh sage leaf along the inside and the rim of a chilled coupe glass. This allows the sage to release the essential oils and transfer the herbal scent onto the glass.
2. In a shaker, muddle fresh sage leaves, add plenty of ice
3. Add the lemon juice and the green Chartreuse.
4. Introduce the Heering cherry liqueur
5. Shake vigorously for 10-15 seconds
6. Strain into the prepared coupe glass; you may want to double strain if you want a clear drink.
7. Crown with 45 ml dry Champagne or sparkling wine; I used Bollinger for this cocktail.
8. Finish with 30 ml of sparkling water, balancing the libation to perfection; I recommend San Pellegrino for enhanced flavour.
9. Garnish with a fresh sage leaf, Maraschino cherries and a twist of lemon

1 fl oz Heering Cherry Liqueur
1/3 fl oz Lemon juice (freshly squeezed)
1/2 fl oz Green Chartreuse (or alternative herbal liqueur)
1 1/2 fl oz Brut champagne/sparkling wine
1 fl oz Soda (club soda) water
4 leaf Sage leaves
