How to make:

Making the infused vodka:
First we need to sterilise our ingredients.
Place the shards of the terracotta pot in the oven at 180c for 20 minutes then let cool for around an hour.
Wash the leather scraps with warm water and a tiny bit of dish soap. Rinse until no soap remains and squeeze as much of the water out as possible. Can be left to air-dry overnight or place on the handle of the oven while the terracotta is cooking.
For the infusion, put the following inside a refusable cotton nut milk bag:
Terracotta - 95g
Leather - 14g
Whole Peppercorns - 4.5g
Grapefruit skins - 14g
Dried cherries - 125g
Submerge at room temperature in 700ml of vodka for 12 hours (or overnight)
After the infusion, raise the nut bag of ingredients and hang above to allow the majority of the vodka to drip out without squeezing.
If the infusion is cloudy afterwards, pass through a coffee filter until clear.
Method:
30ml of infused Vodka
30ml Beesou
2.5ml Muyu Chinotto Nero
62.5ml Soda water
Store all ingredients in either a chilled or cool area.
All poured directly into a flute and served without garnish to imitate a sparkling wine.

1/12 fl oz Muyu Chinotto Nero liqueur
1 fl oz Wine inspired infused Vodka
2 1/12 fl oz Fever-Tree Premium Soda Water
