Well-Expressed Lemon pith
Pineapple Foamer:
This foamer is Vegan and egg white free, however if dietary restrictions are not an issue you can just use 50ml pineapple juice, 1 egg white, 1 dash fire tincture and a drop of saline solution.
The pineapple foamer is made officially with 50ml Pineapple juice 20ml Fancy Foamer, 1 dash Scrappys Fire Tincture, 1 drop of saline solution.
Once the foamer is made add your Beesou Honey Aperitif, Blanco Tequila and Lavender Syrup to a mixing vessel and stir until very chilled.
Next add the mezcal to your pineapple foamer and dry shake for 20 seconds minimum.
Pour the honey base layer over ice in a Snifter glass, a large sphere is best but cubed ice is also satisfactory.
Float the pineapple foam over the top of the base layer.
Lastly garnish with a well-expressed lemon pith.
