Garnish:

Fennel Pollen dusting on one side of the glass. An isomalt “frozen” nettle leaf and seasonal wild flowers (I used forget me not’s)

How to make:

Combine the beesou, lemon juice, ginger cordial, and the nettle & honey cordial in a shaker. Ice and hard shake.
Using lemon juice, wet the rim and side of the Atlantic Hiball / small Collins glass and sprinkle the fennel pollen onto the lemon juice.
Double strain the drink from the shaker into the iced and prepped glass.
Lay the nettle garnish on the ice and the glass rim, finish with the wild flowers.
