The recipe for Ransom Old Tom was developed in collaboration with the rightly revered historian and author David Wondrich, and is designed as a gin to recreate vintage cocktails dating from the mid- to late-1800s.

Ransom Old Tom is made using a base wort of malted barley, combined with an infusion of botanicals in two row barley corn neutral spirits and distilled in a copper pot still, then cask aged for three to six months (we understand usually 3 to 4 months). Six botanicals are used: juniper berries, orange peel, lemon peel, coriander seed, cardamom pods and angelica root.

Όψη:

(Batch 007, bottle No.1270) Clear, golden amber.

Μύτη:

Spicy pine forest and flamed orange zest nose with aromas of freshly split sappy pine, eucalyptus, dark honey, cardamom, star anise, angelica and bitter lavender.

Στόμα:

A dry, huge but balanced palate delivers the flavours present in the nose but far more elegantly than the nose might suggest with pine and orange zest to the fore.

Orange bitters, rye dryness with distinct woody, smoky and dry orange zest finish.
