Launched in December 2012, Hernö is batch distilled in a 250 litre Carl copper still called Kierstin using organic neutral wheat spirit. This base spirit is diluted with well water and redistilled to ensure purity before the eight botanicals are steeped in the spirit and then redistilled.
Juniper and coriander are added first and the still heated to about 70°C then the heat is turned off and the juniper and coriander left to steep for about 18 hours before the other botanicals (meadowsweet, cassia, black pepper, vanilla, lingon berries and hand-peeled fresh lemon peel) are then added and distillation started. Hernö is a single-shot gin with only well water added to reduce to bottling strength.

Crystal clear.
Bright and pungent. Pine sap with lemon and sage from coriander seeds with floral lavender.
Fresh, juniper-led and spicy with vigorous coriander (ginger, lemon and sage), cassia bark (cinnamon) and enlivening black pepper heat.
Black pepper and spicy coriander finish.
A classically juniper-led dry gin with invigorating spice. Great in a G&T.
