I used Plantation 5 yr which although not a vanilla infused rum it is very vanilla heavy in flavor. Due to my rum being slightly sweetened I would probably take the simple syrup out next time. I substituted the vanilla bitters with a dash each of chocolate and black walnut, vanilla was still the dominant flavor but everything came through. Was like drinking cookie dough, yum.
I used a straight white rum (Duppy Share), added 6 drops of bitters and no sugar syrup. It worked out okay…well, better than just okay! Retaining its rum roots and not becoming overtly sweet, helped by the bitters, it dodged the ‘tini’ bullet 😂
The recipe above was missing that the rum is vanilla-infused which may be the difference in colour. However, it's a very old photograph so I'll add it to my list to re-try and re-photograph. Many thanks for bringing to my attention.
