I dropped the pineapple juice since I didn’t have it this time and used a half ounce of simple syrup. The caramel stands out much more this way. I think I’ll do it moving forward.
I too didn't have the caramel liqueur so i went for the nearest thing i had "Nougat & Hazelnut Liqueur, cant compare to original recipe but it tasted lovely with the liqueur complementing the Bourbon very well indeed
I switched up the recipe based on a lack of Caramel Liqueur 5 years ago and have been doing it ever since. 1.5 oz of Bourbon, 0.5oz Cocchi Vermouth Di Torino, 0.5oz Martini Riserva Rubino, 0.5oz Caramel Syrup, 1 oz Pineapple Juice, 2 dashes of Bitter Truth Creole Bitters.
I went for 30 ml Caramel Liqueur, so the caramel flavor is more present along with the bourbon. I guess it will vary depending on the bottles you are using.
