We brought the lemon up to nearly 1/2 oz in order to cut down on the sweetness, and it turned out to be the right call. Tried it with both white rum and aged rum, and both were nice in their own way.
This is a true after-dinner cocktail. Found it a bit on the sweet side, but very flavourful. Wonderful winter flavours and perfect for a late Christmas Eve cocktail.
Another great cocktail to showcase Pedro Ximénez sherry. This one benefits from a balancing bit of sour and subtle orange zest flavor but mostly all the underlying complexity of the sherry's maturation process. I made mine with Plantation Three Star and Mil Pesetas.
