If you don't have sweet vermouth (or don't want to use it for this; although this might be a good use for "old" vermouth?), an apple cider vinegar + dish soap trap works VERY well, too: https://www.orkin.com/pests/flies/fruit-flies/apple-cider-vinegar-fruit-fly-traps

Perhaps I shouldn’t admit it out loud but when I had a problem with fruit flies at my summer house I came up with my own idea for a trap. I used to leave a half of cut fruit (orange) on a table, after while when most flies in the kitchen sat on it I sprayed absinthe on them through flame so that they burned. I’ve never been proud of it so now reading this article I’m going to change my way of getting rid of them. Happy Holidays to everyone.

So Pertinent!!! Drain flies are also a scourge, they are the ones that dart around in irregular patterns and usually find a way up your nose at some point- ick. The vermouth trap is super, super helpful. In my kitchen I use a simple trap of water with a dollop of apple cider vinegar, not too dark, plus a small drop of dish detergent on top, which coats their wings and prevents escape. Use multiple traps if they are numerous. The size of the container doesn't matter, it's more about proportions.
