The name of the cocktail was a red rag to our fiddling bull (incidentally, maybe an apt name for a Berkshire pub). But we satisfied our taurine inclinations merely by substituting two drops of Bob's Chocolate Bitters for the Vanilla. Coconut rum liqueur and sherry. Who would have thought? Perhaps only a smart Spanish party girl. Bravo Paloma.

For someone who's not into regular cocktail R&D, Paloma did a fantastic job! What a great nutty combination with the coconut and sherry! The Benedictine adds equal parts honey and complexity and the rum adds a wonderful spirituosness, particularly with the c0conut too. Inspired.

I've checked and sadly this is the only Paloma original on Difford's Guide. In the meantime, we're all stuck with the stuff by that Simon guy.

I don't really like the taste of sherry, but this drink somehow makes the sherry very palatable - I think it's the coconut that does it - so don't be put off if you too don't like sherry!
