Ingredients:
1 12 oz Light gold rum (1-3 year old molasses column)
12 oz Coconut rum liqueur (35-40% alc./vol.)
12 oz Bénédictine D.O.M. liqueur
12 oz Lustau Jarana Fino Sherry
4 drop Bob's Vanilla bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Nick & Nora glass.
  2. Prepare garnish of square of white chocolate balanced on rim.
  3. STIR all ingredients with ice.
  4. FINE STRAIN into chilled glass.

Created in April 2017 by Paloma, my better half, at the Cabinet Room in London, England. Named after she instructed yours truly to stop trying to make the drink she'd just created better.

Are there any more Paloma drinks? She's so much better at making up cocktails than that Simon guy.

I've checked and sadly this is the only Paloma original on Difford's Guide. In the meantime, we're all stuck with the stuff by that Simon guy.

I don't really like the taste of sherry, but this drink somehow makes the sherry very palatable - I think it's the coconut that does it - so don't be put off if you too don't like sherry!
