Sorry for a stupid question, but how the opened bottle of sherry is supposed to be stored? I mean it’s a wine, so after a day in the fridge you can really use it, right? So should I open a new bottle every time I need 15 ml of sherry? Thanks

Yes, sherry is a wine so it should be handled as such. Refrigerate once opened and ideally use a vacuum device or inert gas to help protect against oxidation. Stored this way, dry sherry like fino is good for a week and OK for two weeks. The sweeter the sherry the better it will keep and PX stored this way is good for 6 weeks. Fresh is best! All sherries are at their best when first opened.
