Tried another New York sour with 20ml and that can’t be right, 10ml worked well. 20ml was messy.

As per most of my recipes, I default to 15ml of Vegg White in most cocktails to not only provide foam, but also replace the dilution and mouthfeel of egg white. Average large egg ≈ 30 ml egg white (albumen).
