It really is an earthy, yeasty dry Negroni, and I like it a lot more than the original. Surprised by how the bitterness in Cynar is so similar to Campari bitterness without being as overpowering. Now I need to experiment substituting Cynar with Campari in other cocktails...
I tinkered with this, using what I had in the house! Replaced Fino with Manzanilla (Bodegas Hidalgo La Gitana) and garnished with Grapefruit zest. Tasty.
