Kind of a Penicillin with a skosh of Daiquiri splashed in? The lime is present but not intrusive. I made this with Laphroaig Oak Select (not Islay-apex smoky). I love the Penicillin, but I'd be more than willing to make this again in the event I don't have any ginger syrup on hand and/or am too lazy to make it. I just ran out of that Laphroaig, but I'm now wondering if some ginger bitters would satisfy my inclinations... This is not a sweet drink though, so I doubt bitters would be appropriate.
I wish I could feel the brilliance. I made it with the original Scotch utilised, the Glenlivet 12. A strange mustiness (the malt probably) ruined the entire balance of the drink, with that being the starting point, rounded out by the much more pleasant honey and lime. Strange drink.
@Simon Difford Tried it again with this new recipe. Much, much better. It makes more sense now. I think the lemon pairs better than the lime with the Speyside Single Malt.
