Oleo-saccharum is Latin for 'oil-sugar' and is the name given to the syrup made by using sugar's hygroscopic property to extract the fragrant natural oils...
Had a few goes, including with both shop and homegrown lemons, but I don’t seem to getting the suggested liquid coming off- though the lemony- sugary mix I did get smells wonderful. Tried both peels and microplane. Any suggestions?
“On a microscopic level, sugar extracts oils from fruit rinds gradually though osmosis, however, oil extraction is greatly accelerated through muddling or mechanical abrasion of the mixture, which helps to rupture oil-rich vacuoles on the rinds' surface or flavedo.[5] A frequent misconception is that oil extraction occurs due to sugar's hygroscopic nature, though this unlikely as the essential oils being extracted are hydrophobic.“
