Cognac is sweeter than the rye whiskey (or even bourbon) on which the Manhattan is classically based. Cognac is also usually slightly lower in alcohol...
Really delicious! Given the origins of cocktails in the US when cognac was the dominant spirit, before domestic whiskey greatly expanded, a brandy Manhattan is perfectly logical. As well as tasty. I added an orange spritz as well, orange butters could also work, depending on your ingredients. Even better is it warmed slightly. One to add to the repertoire.
Recipe was also very amenable to combining vermouths for added complexity, e.g. I used up some slightly older and tired carpano and Rosso antico to good effect. … might be time to invest in a coravin..
This a outstanding as an evening sipper. Very spirit-forward with just a hint of sweetness. Nice herbal tones. Was a lot drier than I was expecting based on the sweetness rating. Would definitely do again for a nightcap.

Very nice Manhattan. Used a little less Rosso Sweet Vermouth then called for as I didn't want too sweet of a Manhattan. Definitely will make it again. Would give it 9.23/10
