I like this as a sour with egg white / aquafaba, and swap the simple for speculoos syrup for a ‘biscoff base’ vibe that provides a bit of intrigue against the bright lemon.
Amazing cocktail. Very rich, sweet, Tart and creamy. Hint of vanilla balances it nicely.
Swapped 15ml simple to cinnamon syrup to spice and add a bit of a Sablé taste. Recommended !
Outstanding for after dinner. It is very sweet to me, but that can be the Limoncello we were using. It does taste like a piece of lemon pie. Much better than a piece of pastry.
I was worried this would be too sweet with the generous addition of the simple syrup, but it was perfect. Used a Meyer lemon and it was amazing - clean, tart, with just enough cream to evoke meringue. Not too heavy to be a summer drink if one is careful to chill the glass.
Not having all the ingredients to hand and desperate to make this decadent Limoncello cocktail, I made a couple of substitutions which worked really well.... Monins Hazelnut Syrup added complimentary nutty notes and Cointreau was delicious with the cream. Definitely to be repeated.
