This is really good! I agree that proper dilution is key. It helps mellow the Suze enough that it's bitterness doesn't dominate. The tequila comes through nicely, especially on the swallow, and of course lemon peel and Suze are a wonderful combination.
I do like this cocktail. It needs dilution, the more chilled water you get into it the better it loosens/improves. I'm currently going through a regime of trying to train myself to like the taste of Suze/Gentian, so this cocktail is actually part of a process rather than a personal choice. I guess it is a difficult journey to get past that 'yakky' moment you have with Gentian. But I feel I need to make the effort!!
A White Negroni with tequila (works very well with Suze) but also drier thanks to the vermouth rather than Lillet. I used an extra dry vermouth though which might have given me that impression.
Love Suze, love negronis, this one and the lemon zest works for me! Also check out Jersey's Best Dancers; same proportions but with mezcal and orange zest. Seemed dryer somehow.
