Is not so bad. But when I poured at home I was received with: Dimetap! and a Grimace. Its much better than it sounds, the Poire is sort of forgotten or just in the very back. I would have to think a lot to find in my agenda a moment for this drink. But is good to know.
Even nicer than I expected. The genever is in the background here providing maltiness. Pear is most evident, enjoyably so, supported by the honey and citrus. Beautifully balanced. I had to make up an “instant honey syrup” as all my jars (!) were still solid from antipodean winter. Making it vaguely reminiscent of a cross between a penicillin and a Martinez.
Superb. The eau-de-vie tames the honey until only a hint is left. Genever adds its herbal bready flavours, and the citrus softens the eau-de-vie. Perfectly balanced. Not for someone who does not like a hint of alcohol flavour in their cocktail.
