An unlikely combination of big rich flavours, but when served ice-cold this is either a very interesting Mediterranean aperitivo or a palate-cleansing...
A beautiful bright yellow color - looks great in a glass. I made with Suze - which leads the flavor (and gives the color). The mastiha adds some depth and minerality to the classic earthy, vegetal bitterness of the Suze (and the mastiha may also blunt the bitterness, by adding a bit of sweetness). A really nice cocktail for Suze fans.
Haven't tried a mastiha I didn't like (only three so far or was it four?) but this combination is like a silky earthy marriage made in heaven! Verino Antica Mastiha, Suze, Bitter Truth "Celery" bitters.
