No longer just a buzz word, taking responsible action in how spirits are produced is key to the longevity of our industry. At Manly Spirits, the team work to ensure they're making sustainable choices in sourcing their ingredients as well as dealing with the by-products of distillation. Here's an insight it the steps taken already so your 5pm G&T is guilt-free:
Two of Manly Spirits botanicals are foraged from the ocean and its surrounds, giving the gin and other spirits and liqueurs a unique identity, inspired by the Northern Beaches idyllic coastline. However, when foraging the team ensure they don't disrupt the balance of the ecosystem by taking too much.
Their sea lettuce, which is the only seaweed that can be foraged legally in Australia, grows on the rock shelf, and luckily grows in abundance. The beach cast kelp is another story however, and the team only forage that which has washed up on the beach after storms, never taking it directly from the ocean.
Manly Spirit's Australian native botanicals are sourced from Indigenous growers and local farmers around Australia.
The leftover raspberries, used to infuse the Lilly Pilly Pink gin for colour, are then strained and donated to a local baker to be made in Raspberry Gin Jam. Plenty of the delicious botanical gin flavour remains making this a gorgeous and unusual by-product.
Similarly, local baker, Kiki from Luscious Kiki Cakes, takes the gin-soaked vanilla pods from the Amber Spiced gin cascara and vanilla infusion and makes chai tea, amber Ssiced cakes and more.
Spent barley from Manly Spirits Single Malt whisky is given to local Aussie farmers for their cows and chickens to enjoy. The spent grain has such high-protein content that the chickens often produce much larger eggs thanks to its nutrients.
As only the lemon peels are needed for Manly Spirit's Zesty Limoncello production, the rest of the lemon is used by a local juicing company to make fresh lemon juice.
Each order from Manly Spirits shipped uses only one cardboard box per parcel with diecut support dividers. It passes the 'drop test' without any plastic involved.
Manly Spirit cut down empty bottles to be reused as candles and glassware, perfect for cocktails or a G&T.
