I enjoyed this very much, a nicely balanced sipper……….very spiced when eating the crystallised ginger. Yum.

I make an alternative, I use Don Papa’s Masskara Rum, Orange Angostura Bitters and Maple Syrup, as a combination, it’s next level, this beautiful warmth from the rum and maple, and a lovely orange freshness from the bitters. It’s a beautiful short cocktail.
I’ve just made one as per the Diffords recipe, said to my wife it might be nice with a dash of Orange Angostura Bitters!
Will try your recipe out next. Thank you!
Very enjoyable! Substituted King’s Ginger for Crabbies Ginger Liqueur as the newer version of King’s Ginger is a bit lemon heavy.
Ooh, no. This ain't it chief. Sorry. The OTT nature of a Mai Tai is to flex on your selection of rums, not to add random liqueurs (creme de menthe? really?) you find. The complete lack of any jamaican rum to begin with should disqualify it.
Avery, I think you’ll find that Appleton Estate 8 Reserve is a Single Estate Jamaica Rum.
Personally I don’t add the Crème de menthe as I don’t have any, but use the rest of the ingredients. So far I’ve not had any complaints.
