Made from Espadin agave grown in Oaxaca which are traditionally roasted for 4-6 days in earthen pits lined with volcanic or river rock. The cooked piñas are crushed using a Tahona wheel. Depending on the season, fermentation lasts 6-8 days before double distillation in copper pot stills.
