Ingredients
1 1/2 fl oz Blended Scotch whisky
3/4 fl oz Belle de Brillet pear liqueur
1 fl oz Apple juice/apple cider (cloudy & unsweetened)
1/3 fl oz Lime juice (freshly squeezed)
1/6 fl oz Monin Vanilla Syrup
3 drop Bob's Vanilla bitters (optional)
3 drop Saline solution (20g sea salt to 80g water) or merest pinch of s (optional)

How to make

Glassware

Serve in a Coupe glass

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of pear wedge.

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish

  1. Garnish with pear wedge on rim.

History

Adapted from a recipe created in 2003 by Jamie Terrell at the iconic Dick's Bar at the Atlantic Bar & Grill in London, England. The Atlantic Bar & Grill opened in 1994, and it, particularly Dick's Bar, is considered the birthplace of the cocktail renaissance.

Shaken and strained into an ice-filled Collins glass:
60ml (2oz) Scotch whisky
30ml (1oz) Pear & Cognac liqueur
90ml (3oz) Apple juice
15ml (½oz) Lime juice
7.5ml (¼oz) Vanilla syrup

A "Deluxe Version" was shaken and strained into a chilled Martini glass:
Pulp of 1 fresh Passion fruit
45ml (1½oz) Scotch whisky
30ml (1oz) Pear & cognac liqueur
30ml (1oz) Apple juice
30ml (1oz) Pear juice
7.5ml (¼oz) Lime juice

Review

Scotch, pear and apple combine wonderfully in this fruity and balanced cocktail. Pear juice in place of apple juice produces a richer and arguably tastier cocktail.
